Ingredients to make Layered Cheese Spinach Lasagna

1 pound cottage cheese
1 pound ricotta cheese
4 eggs
3 teaspoons fresh (or 1 teaspoon dried) oregano
3 teaspoons fresh (or 1 teaspoon dried) basil leaves, finely chopped
black pepper, to taste
1 x 10-ounce package frozen chopped spinach (substitute fresh, if you prefer)
16 ounces shredded mozarella cheese
2 x 29-ounce cans tomato sauce
3 teaspoons fresh (or 1 teaspoon dried) parsley, finely chopped
3 cloves garlic, chopped fine
1 tablespoon Worcestershire sauce
1 medium onion, finely chopped or grated
1 pound package of lasagne noodles (whole wheat or buckwheat varieties recommended for highest nutritional value)
1/2 cup grated or 3/4 cup shredded parmesan cheese

Directions to make Layered Cheese Spinach Lasagna

Step 1:

1.Preheat oven to 325 degrees F. Thaw frozen spinach. Drain thoroughly.

Step 2:

In a saucepan, combine tomato sauce, parsley, garlic, onion, Worcestershire sauce, pepper (to taste), and a dash of parmesan. Simmer sauce for 30 minutes.

Step 3:

Cook noodles according to package directions, drain, and soak in cold water until needed. Gently pat dry. Some varieties of noodles do not require cooking before layering into the recipe

Step 4:

Mix in a large bowl the first seven ingredients plus one-half (8 ounces) of the mozarella.

Step 5:

Bake for 40 minutes, or until hot and gooey in the center. Cool slightly before serving for best consistency

Ingredients to make Cool Citrus Lobster Salad

3 8 oz lobster tails; fresh or frozen
1 md Pink grapefruit; peeled, sectioned
1 md Orange; peeled and sectioned
1/4 c Orange yogurt
3 tb Orange juice
1 tb Fresh lemon juice
1 ts Grated orange rind
1 ts Grated lime rind
1/8 ts White pepper
4 c Fresh spinach leaves; torn
2 ts Fresh chives; chopped

Directions to make Cool Citrus Lobster Salad

Step 1:Cook lobster tails in boiling water 6-8 minutes or until done; drain. Rinse with cold water. Split and clean tails. Cut lobster meat into bite-sized pieces. Combine lobster, grapefruit sections and orange sections.
Step 2:Combine yogurt, juices and rinds with white pepper in a small bowl; stir with a wire whisk until well blended. Pour over lobster mix.
Step 3:Arrange spinach on individual serving plates. Top each serving with 1 cup of the lobster mix. Sprinkle with chives.

Ingredients to make Fresh Spinach and Tomato

1 lb Spinach, fresh or thawed
3 Tomatoes, chopped
1 Onion, large and chopped
1/4 ts Turmeric
1 tb Ginger, fresh and chopped
2 Green chilies (optional)
1 c Water
5 tb Butter
1 pn Salt
1 tb Lemon juice

Directions to make Fresh Spinach and Tomato

Step 1:Place spinach, tomatoes, onions, turmeric, ginger and chilies in a saucepan with 1 cup water. Cook, covered, 15 mins over medium-low heat. Remove from heat and cool.
Step 2:Blend in an electric blender to a creamy consistency.
Step 3:Heat butter in a saucepan. Add spinach mixture and salt to taste. Cook for 5 mins over low heat. Add lemon juice and serve.

Main Ingredient: Spinach, Zucchini, Swiss Chard

Ingredients to make Great Greens Casserole

2 lb Spinach,fresh
3/4 c Olive oil
2 lb Swiss chard
2 lb Zucchini
Salt,to taste
1 c Rice,cooked
3 ea Garlic cloves,finely chopped
6 md Eggs
1/2 c Bread crumbs,fine crumbled

Directions to make Great Greens Casserole

Step 1:Wash the spinach well. Remove the coarse stalks; dry the leaves thoroughly and chop rather fine. Using a heavy skillet, cook spinach in 2 tbspns olive oil over medium heat until just wilted. Drain and put into a large bowl.
Step 2:Wash, dry, and chop the Swiss chard. Using the same skillet, cook chard in 2 tblspns olive oil until wilted. Drain and add to the spinach.
Step 3:Wash, dry, trim, and dice the unpeeled zucchini; add about 4 more tblspns olive oil to the skillet. Saute’ the zucchini, tossing well until just tender. Add zucchini to the spinach and chard, season with salt to taste, and mix in the already cooked rice and garlic. Combine well.
Step 4:Transfer to a well-oiled, heavy 2 quart baking dish. Spoon 3 to 4 tblspns olive oil over the top. Bake in a 300dF oven for 20 minutes.
Step 5:Beat the eggs well; pour them over the vegetables mixture; sprinkle the top with bread crumbs; return to the oven and bake until the eggs are just set, about 10 to 15 minutes

Step 1:Saute onion and garlic in butter until soft. Add spices and cook a few minutes to rid them of any rawness
Step 2:Mix in spinach, yogurt, and salt to taste. Serve.

Ingredients to make Gentle Lentil Spinach Soup

2 1/2 c Lentils,rinsed and drained
7 c Water or vegetable stock
2 md Onions,chopped
3 Cloves garlic,minced
Juice of one lemon
Salt and pepper to taste
2 Stalks celery,chopped
2 tb Olive oil
1 Or 2 bunches spinach

Directions to make Gentle Lentil Spinach Soup

Step 1:Saute onions, garlic and celery in the olive oil, 5-10 min.
Step 2:Add lentils, and water or stock and simmer until lentils are very soft. If necessary, add more water to get soup to desired consistency.
Step 3:Add greens, salt and pepper. Simmer for 10 more minutes or until greens are tender
Step 4:Stir in lemon juice right before serving.

1 1/2 cups tomatillos,chopped
1 1/2 cups onion,chopped
2 cloves garlic,minced
1 teaspoon margarine
3 1/2 cups frozen corn,thawed
1 cup frozen green peas,thawed
1 cup vegetable broth
1 tablespoon cilantro
Add 3 cups vegetable broth
4 oz green chili peppers — chopped
1/4 cup whole kernel corn, frozen,thawed
1/4 cup chopped spinach
1 teaspoon sugar

Directions to make Spinach Corn Tomatillo Soup

Step 1:Saute tomatillos, onion and garlic in margarine five minutes. Remove to food processor and add the next four ingredients. Puree to chunky
Step 2:. Pour in pan and add 3 C chicken stock, 4 oz. diced green chilies, a little chopped spinach, a little whole kernel corn, 1 t sugar. Simmer 1 hour to all day.
Step 3:Serve topped with a dollop of NF sour cream.
